Ingredients
1 cup soft palm oil
2 cups palm sugar
2 large eggs
1 Tbsp vanilla extract
2 cups GF Mix (Recipe on front page)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger powder
1/2 tsp nutmeg
2 cups gluten free rolled oats (i use Bobs Red Mill brand)
1 1/2 cups semisweet chocolate chips
1 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350* and line 2-3 cookie sheets with parchment paper.
- Beat palm oil and sugar in a large stand mixer until light and fluffy light brown
- Add in vanilla and eggs and beat until smooth
- In a small bowl mix together four, baking powder and soda, salt, cinnamon, nutmeg, and ginger powder, and add to wet ingredients. Mix until well combined.
- Add the oats, chocolate chips, and walnuts (if you are using them) and beat until forms a thick dough.
- Scoop Tablespoons of the dough onto the prepared baking sheets 2 inches apart.
- Bake for exactly 8 minutes, let cool for about ten minutes and then put them onto a cooling rack until completely cool.
- It's OK if they're a little sticky in the middle they will continue to bake a little on the sheets.
