Rice with Basil and Meat



My mom makes this recipe every week for Sunday dinner. It's and excellent combination of Basil, Cheese, Rice, and just a little bit of meat. So here is my recipe for...

Rice with Basil and Meat.
Ingredients
1 1/4 pounds lean ground beef, sausage, or cubed chicken
1/3-1/2 cup fresh basil pesto
1/2 cup freshly shredded Parmesan cheese
1 1/2 tsp ground Bar H Beef Rub (link above)
2 cups wild or brown rice
2 cups quinoa
2 tsp salt
black pepper to taste 


Instructions:

  1. Start by cooking the rice in a medium (2 qt) pot with 1 tsp of salt and 2 cups water. Cook for 30 min on low, and add another 2 cups of water, the quinoa and the remaining tsp of salt. Cook on low until quinoa and rice are soft and not crunchy.
  2. While the rice and quinoa are cooking, start to saute' the meat. Cook the meat in a large skillet with ground Bar H Beef Rub. Cook until fully done. If using chicken cook with 1-2 Tbsp olive oil or butter. 
  3. In a large metal or glass bowl combine meat and rice pesto and cheese. Season as needed with salt and pepper.
