Rice with Basil and Meat.
Ingredients
1 1/4 pounds lean ground beef, sausage, or cubed chicken
1/3-1/2 cup fresh basil pesto
1/2 cup freshly shredded Parmesan cheese
1 1/2 tsp ground Bar H Beef Rub (link above)
2 cups wild or brown rice
2 cups quinoa
2 tsp salt
black pepper to taste

- Start by cooking the rice in a medium (2 qt) pot with 1 tsp of salt and 2 cups water. Cook for 30 min on low, and add another 2 cups of water, the quinoa and the remaining tsp of salt. Cook on low until quinoa and rice are soft and not crunchy.
- While the rice and quinoa are cooking, start to saute' the meat. Cook the meat in a large skillet with ground Bar H Beef Rub. Cook until fully done. If using chicken cook with 1-2 Tbsp olive oil or butter.
- In a large metal or glass bowl combine meat and rice pesto and cheese. Season as needed with salt and pepper.
