Gluten Free Dairy Free Oatmeal Chocolate Chip Cookies



Ingredients
1 cup soft palm oil
2 cups palm sugar
2 large eggs
1 Tbsp vanilla extract
2 cups GF Mix (Recipe on front page)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger powder
1/2 tsp nutmeg
2 cups gluten free rolled oats (i use Bobs Red Mill brand)
1 1/2 cups semisweet chocolate chips
1 cup chopped walnuts (optional)


Instructions

  1. Preheat oven to 350* and line 2-3 cookie sheets with parchment paper.
  2. Beat palm oil and sugar in a large stand mixer until light and fluffy light brown
  3. Add in vanilla and eggs and beat until smooth
  4. In a small bowl mix together four, baking powder and soda, salt, cinnamon, nutmeg, and ginger powder, and add to wet ingredients. Mix until well combined.
  5. Add the oats, chocolate chips, and walnuts (if you are using them) and beat until forms a thick dough.
  6. Scoop Tablespoons of the dough onto the prepared baking sheets 2 inches apart. 
  7. Bake for exactly 8 minutes, let cool for about ten minutes and then put them onto a cooling rack until completely cool.
  8. It's OK if they're a little sticky in the middle they will continue to bake a little on the sheets.
